Roasted New Potatoes

We made these as a side to a Deer Roast and both dishes were gobbled up.  These potatoes had such a good flavor that wasn't too strong.  Such an easy dish to prepare!


Cook Time:  45 Minutes
Yields:  4-6 Servings


1 1/2 lb new potatoes, quartered
2 Tbsp olive oil or vegetable oil
2 garlic cloves, minced
1/2 tsp dried rosemary
1/2 tsp dried thyme
1/2 tsp salt
1/8 tsp pepper

  1. Preheat oven to 450 degrees.
  2. Combine all ingredients in a plastic bag; toss to coat.
  3. Pour into an ungreased 9 x 13 baking pan.
  4. Bake uncovered for 35 minutes or until potatoes are tender.
